Drying figs

I almost forgot about the figs. I don't know how I could forget because figs are my all time favorite fruit. I start testing the figs for ripeness in early June, way too early, but I'm so impatient and can hardly stand the wait that I must touch them, all the time.




It had been about three weeks since I last checked the figs for ripeness, I was inside, having some tea when I let out a yell, "the figs"....


Ran out and wouldn't you know it the birds got most of them. I was able to pick about 10 all the while cussing under my breath but happily I ate a few right off the tree and then decided to sacrifice some to the dehydrator.

I was so worried that they would not dry properly that I was checking the dehydrator almost every hour. They dried OK but as my blog friend Said the Hobbit noted, it's hardly worth the effort, and I agree. As with other fruit you really have to stay on top of the drying. Often the fruit dries quicker than anticipated and it's also not as sweet as you might think.

On a positive note...while the figs were drying the house had a wonderful sweet aroma, very pleasant indeed.

Oh those lucky birds.Drying does require vigilance.....I'm hoping to get better at it. I think you need to start delegating more duties.But,what a treat, to eat your own figs this winter, no matter how few you have.

My mom used to have two of the most wonderful fig trees. Lots of fruit on each. I think one was called a Brown Turkey fig tree. It had big, plump figs. I loved to go out and eat them right off the tree. Those sure were good eats! - Margy

Figs were my Mama's favorite fruit too. She made the most awesome fig preserves...served with piping hot Southern biscuits. Thanks for the memory!

last year I preserved figs in syrup and oh boy were they ever good. The best way to eat them is on a plain but salty cracker, spread with soft goat cheese and then top with the figs in syrup, sounds weird I know but wow is it ever good.
